Friday Five Word Vomit

Today you get a Friday Five. I love reading these posts on other blogs and enjoy writing them so here it is:
 
1. Today is the first day of my SPRING BREAK. It could not have come at a better time. My students have had enough of me and I of them. I actually  had a student (who isn't even in my class) ask me why I'm never absent which I took as a compliment of my work ethic lol. He was probably prompted to ask me this because his teacher is always absent. He must think its the norm for your teacher to be out at least two days a week. 

2 I've been doing really well with my exercising and eating healthier. I've really buckled down on the training for this half marathon and started doing the 100 push-ups challenge. Push-ups are the devil. I'm even going to Bikram tonight at 6pm. I don't think I've ever worked out on a Friday night. Ever.

3. I recently bought a pair of Chuck Taylors. I'm not sure I am cool enough to pull them off. I got these My  husband thinks they are hideous. We'll see what they look like when they get here

4. I am making Cadbury Egg Cookie Cake Bars from the Picky Palate for our Easter brunch at my sister's and also for our Easter dinner at G's mom's house. Truthfully, I don't like Cadbury Eggs creme or otherwise but these look so delicious and I think I'll like the Cadbury eggs mixed with all the other deliciousness. 



5. I have so many projects I want to tackle during spring break. Lots of organizing and cleaning but I also want to relax as well. After break, there are about 10 weeks left of school which is just crazy. This year has flown by

1. What is your favorite thing to do on a rainy day?
Clean and read. I use rainy days as an opportunity to get my house in order and catch up on books and magazines I've been meaning to read!

2. What is your favorite thing to do on a summer weekend?
My parents have a pool in their backyard and it is hands down  my most favorite place to gather with my family and friends! I love it back there.

3. What is your favorite spring activity?
Here in my city there are always tons of festivals, fairs, and such going on usually right down the street from our house or in another neighborhood in the city, I love going to those when the weather is so nice in the spring- not too hot, not too cold!

4. What is your favorite way to spend a winter day?
By a fireplace, no doubt. Wish I had one in my house!

5. What is your favorite season and why? 
Summer!! Summer = no work!

6. What is the best birthday you ever had?
I had a surprise birthday at the indoor pool in my hometown (my birthday is in December) and I remember it so vividly so I'm going with that one. I've had plenty of amazing birthdays, thought!

Best Ever Spinach Salad

The weather here in Charm City is definitely getting nicer and since I am still eating for one with the hubs working all the time, I was looking to move away from the heavy dishes I've been making this winter. 

Enter Recipe Boy. Have you ever read Recipe Girl? Well, Recipe Boy is the foodie child of Lori Lange, the brains behind Recipe Girl. I often turn to her for delicious recipes. She makes one of my most favorite, go-to summer appetizers, Bruschetta with Peach Salsa & Melted Brie so I figured her son had to have awesome recipes, too! When I saw Best Spinach Salad Recipe on his blog, I decided to give it a try. He is 11 years old and all the money he makes via his blog goes directly to his college fund, so adorable!

This salad is amazing. It is light enough that I don't feel crushed after eating it but hearty enough that I am full.
It is also super easy to make with just a few ingredients. The original recipe calls for an avocado but the first day I made this salad I'd had guacamole as a snack and was not feeling more avocado so in lieu of the avocado I added a shallot I had on hand and half a green pepper. I could seriously eat this salad everyday, which is what I am going to do this week. 

Oh, and don't skip making the vinaigrette, I was just going to use salad dressing I had but since I had all the ingredients for the vin I made it and I am so glad I did! I also adjusted the recipe to be a serving for a single person but made the vinaigrette as is and bottled it to keep in the fridge.  


Best Spinach Salad Recipe by Recipe Boy (my adaptations noted with a *)

SALAD:
4 generous handfuls of fresh spinach leaves
1 1/2 cups chopped cooked chicken
1/3 cup goat cheese crumbles
6 slices bacon, cooked and chopped
1 large avocado, peeled, pitted and sliced (*omitted)
1 shallot, chopped*
1/2 green bell pepper*

VINAIGRETTE:
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon strawberry jam
1/2 teaspoon Italian seasoning
salt and pepper, to taste

Directions:

1. Place salad ingredients in a medium bowl. Mix vinaigrette ingredients together and drizzle on top. Toss and divide between four bowls for serving.

Yesterday, I popped into Anthropologie to pick up this adorable shirt (it is more than likely a Scottie but I don't care I want it to be a Schnauzer and it will be so!). It should be known that I am like a young child in that I absolutely love animal prints. Like prints of actual animals not like leopard or cheetah or zebra. I have shirts with the following animals on them: bunnies, horses, foxes, various breeds of dogs and a dress with lobsters on it. I digress. The clothing in Anthropologie right now is to die for! I seriously could've stayed there for hours fawning over all the cute stuff. The Anthropologie here in the city just opened last summer and I am so grateful I can walk to it! I'm debating getting a job this summer and was considering trying to work at Lululemon for the work clothes discount but stopping in Anthropologie has me questioning that choice...

I hope everyone is having a great weekend! I am, like always, bummed it is Sunday but I am going to try to make the best of this gorgeous day!

1. What is one movie you are terrified to watch?
Scary movies that are about things that could actually happen to me like movies about someone being abducted or a disease spreading and killing everyone.

2. What is one TV show you have always wanted to get into but haven't yet?
The Good Wife! I really, really want to start watching it and even try to avoid the commercials on TV but haven't gotten around to watching an episode yet!

3. What is one daring activity on your bucket list?
Uhhh I don't really have anything "daring" on my bucket list. I'd like to hike in the Pacific Northwest but I don't think that's daring?

4. Would you ever travel alone?
I would travel to a place alone like take the flight by myself but no, I do not wish to take a jaunt in Greece all by my lonesome. 

5. What activities do you like to do alone?
However, I do enjoy reading, cleaning, shopping, watching TV alone.
